Hitting it hard..

Back to the daily grind. Damn near a month “off” from work, give or take a few calls etc. I did an ifast saturday, followed by 100% paleo meals. Sunday I made a mostly paleo quiche. It had some heavy cream in it. Very good eating. Pretty simple to make too.
4 Eggs
1 cup of heavy cream
6 strips of bacon
2 cups almond meal for crust
2 tablespoons butter
1 grilled chicken breast
A handful of chopped onions and jalapenos
1 cup of cheddar cheese

In a small skillet put 1 tsp of olive oil and onions and peppers, until they go clear. Set aside.

Grill your chicken and do up your bacon, shred and crumble that.

 

Whisk 4 eggs and cream together, add any cheese to this mix. Melt a little butter and add a little almond meal until you can make it stick to the pan. I chose to not bake my crust, I suppose you could.

At any rate, layer your veg and meat in the crust, and slowly pour the eggs into it. In a preheated oven at 350F let it ride for about 15 minutes, keep an eye on it until it goes golden brown.
